Peppers a lo Pobre – Poor Man’s Peppers

This is a variation on Paul Whitelock’s Papas a lo Pobre, posted recently on Secret Serranía. The main ingredient for this cheap and healthy meal is peppers, rather than potatoes. Here’s how Paul did it…

Peppers a lo pobre – Secret Serranía Style

Ingredients (for two people)

2 tbsps coconut oil

3 peppers de-seeded and cut into rough chunks. I used 1 red, 1 green and 1 yellow pepper for flavour and appearance.

1 medium red onion, chopped roughly

3 cloves garlic, chopped roughly

2 medium potatoes, cut into rough pieces. If in good condition leave the skins on.

Salt

Ground black pepper

2 Bratwurst

Method

Heat the coconut oil in a large frying pan.

Add the potato pieces, season with salt and pepper, and fry for 5 mins until they start to turn golden.

Lower the heat and add the garlic and onions and stir. Fry until the onions begin to go transparent, stirring continually.

Add the peppers, mix well and continue frying, stirring occasionally.

Meanwhile fry or grill the bratwurst.

When the mixture is cooked and the Bratwurst done, adjust the seasoning , if necessary, and serve with a soft bread roll or a hunk of rustic bread and a dollop of Dijon mustard. I had a Bavaria, a soft roll from South Germany, which I found on sale in LIDL.

As an accompaniment a robust vino de la tierra works well. I chose a tempranillo from La Mancha, which cost around 2 €.
